The garage sale is this Saturday! We'll be introducing many new products this time. First, please take a look at these: We're excited to introduce the legendary shiitake mushrooms, "Hana-donko".
Shiro-hana-donko (White Flower Donko)
The surface of the cap of Shiro-donko is covered in a white, flower-like pattern with cracks. They develop over several years in well-ventilated forests, absorbing the forest's essence, after the fungus has spread throughout the entire log. They emerge from late autumn to early spring, and these mushrooms, which have endured the cold, have a dense cell structure, resulting in rich aroma, texture, and umami.

Tenpaku-hana-donko (Premium White Flower Donko)
Tenpaku-hana-donko are a type of Shiro-donko with well-defined cracks. They are considered the highest-grade luxury product among shiitake mushrooms. They are so rare that they are called "a miraculous cluster of miracles," making up only 1% to 2% of the total production. They are the highest-grade shiitake mushrooms, having won gold prizes at national competitions.

Cha-hana-donko (Brown Flower Donko)
The surface of the cap has a brown, flower-like pattern. Like Tenpaku-donko, this indicates a thick-fleshed shiitake. Both Tenpaku-donko and Cha-hana-donko grow slowly during the cold season, and their distinctive feature is that their surfaces burst and crack.

Hana-donko are thick and have excellent broth and aroma, making them often used in simmered dishes and soups. They are highly versatile in various cuisines.

Hana-donko are typically rehydrated in water. To rehydrate them, soak them in water overnight, and they will be ready the next day. Rehydrating them at a low temperature helps to bring out the umami and sweetness of the shiitake, so it's recommended to store them in the refrigerator. The soaking water also contains good broth, so it's recommended to use it as dashi. How about a dashi-maki tamago with Hana-donko dashi?
At this garage sale, we have prepared three types of Hana-donko in small packs. If you're interested in cooking, don't miss out! They also make excellent gifts for your loved ones.

In addition to Hana-donko, the street food Cheong Fun (rice noodle rolls), which is ingrained in the DNA of Hong Kong people, will be making its debut at the garage sale. We have a set of Cheong Fun with four types of sauces. The sweet sauce, in particular, goes very well with fish siu mai and curry fish balls, so why not enjoy the whole Hong Kong street food experience!
