Dàhóng zhècù (red Zhejiang vinegar) is a type of vinegar that originated in Zhejiang, China, and has a reddish hue. Zhejiang vinegar is brewed using glutinous rice. Many people add a little Zhejiang vinegar to shark fin soup to neutralize the fishy smell of the shark fin. In Hong Kong, people also use Zhejiang vinegar to season dishes such as xiaolongbao, potstickers, snake soup, and faux shark fin soup.
This red vinegar has a natural color without artificial coloring. Please use it as a dipping sauce for noodles and dim sum. It is an essential dipping sauce for Hong Kong Wonton Noodles.
